Making these vids is surely more on shear equipment and location then incredible editing skills. Although editing does play it's part.
I think there is a place for all types of content on YouTube, but it's always about what will pull the largest audience. I'm sure this kind of content will pull a large enough viewership. If you had a 1-2 min vid a week that showed material like this, I don't know why anyone would not come back to watch next week.
Only issue later is, can you keep it creative, fresh, and different each time you do this.
